Korean Beef Bowls

Russ likes these best the next day as leftovers

Cooked Jasmine Rice
1 lb ground beef
3 T. brown sugar
3 T. soy sauce
2 T. sesame oil
1 T chili garlic sauce
1/4 tea ginger
4 green onions, sliced
1 carrot, grated or chopped really small
1 zucchini, spiralized, if you dont have one, get one, they are cheap and fun and easy

Cook the ground beef until all the fat is cooked out and its in small pieces.  Stir in the sugar, soy sauce, sesame oil, chili garlic sauce and ginger.  Reduce the heat to low and toss well, cook for 5 minutes.  Stir in the green onions and zoodles and cook for 2 minutes.

In a bowl put rice, then beef mixture and sprinkle the carrots on top.

Drizzle Sweet Chili Sauce over the top, Enjoy

Teriyaki Rice Bowls

Teriyaki Sauce
1/4 cup soy sauce
1 cup water
1/2 tea garlic powder
5 T. packed brown sugar
1-2 T. honey
2 T. cornstarch
1/4 cup cold water
Mix all but cornstarch and 1/4 cup water in a sauce pan and began heating.
Mix cornstarch and cold water in a cup and dissolve, add to sauce in pan.
Heat until sauce thickens to desired thickness.
Add water to thin if you over-thick it.
***I usually add about 1 cup of Veri Veri Teriyaki marinade from Costco if I have it on hand***

Stir fry thin sliced meat and veggies in olive oil, I use broccoli, zucchini, onions, mushrooms and sometimes carrots. Add just a little Teriyaki sauce at the end, maybe 1/8 cup.

Cook Jasmine rice.

In a bowl layer rice, meat and veggies and then sauce.

Chicken, Potatoes and Vegies

Ingredients
4 medium potatoes, cut (I like the new potatoes)
2 c. vegies, broccoli, cauliflower, beans,  any vegetable will do
1 lb chicken breasts, tenders or thighs
1/2 c. butter
1 package Italian dressing mix

1. Cut vegies up. Line one side of the pan with then

2. Cut potatoes up. Line opposite side of pan with the potatoes.

3. Line the chicken down the middle of the baking dish.

4. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan, make sure you get enough dressing, this is what makes it really good. Cover with foil.  bake at 350 for 1 hour

When it comes out of the oven I usually cut up the chicken with my kitchen scissors to make it easier to serve.  You need to cook it with the chicken whole or the chicken will cook before the potatoes.  With the tenders it is done in about 40 minutes so if using tenders then cut your potatoes smaller.
